Heirloom Carrots Roasted with Zaatar

 

We all know the health benefits of carrots. They are rich in beta-carotene which the body converts to vitamin A, a vitamin which is known to help with eye health.

 

What is less known are the health benefits of the zaatar mixture of herbs and sesame seeds. Research is showing how zaatar can boost your immune system as well as help reduce inflammation. Years ago I remember reading how the Rambam suggested to have zaatar the night before a test because it helps with cognitive function.

 

I love the flavors of zaatar in salad, on chicken and on various vegetables. Here is my super easy variation using heirloom carrots. You may substitute all orange carrots and it will still be delicious.

 

2 pounds heirloom carrots (multicolored ones)

2 tbs. olive oil

Course kosher salt

2 tbs. zaatar

 

Preheat oven to 375 F. Prepare a parchment lined jelly roll pan.

 

Wash carrots well. Cut into 3” lengths. Cut into thinner batons by cutting lengthwise in half, then in half again. This will reveal the beautiful colors within the purple and red carrots, as well as create many surfaces for caramelizing while they cook.

 

Toss carrots with olive oil and salt, Sprinkle with zaatar and toss gently.

Roast in preheated oven for about 25-30 minutes or until edges begin to brown and carrots are tender.
